Here are three simple recipes for pasta which are pretty-to-very quick, relatively simple, and very rewarding; big change from spaghetti and meatballs. Of course fresh (non-dried) pasta always tastes great, but if you can't get it and don't feel like making it, you don't know what you're missing anyway so who cares? The taste of the walnut sauce is a total surprise and good for impressing any vegetarian. --------------------------------------- Things to do with Pasta Walnut Sauce (for 3 or 4 servings) 4or5 oz. walnuts, chopped fine or ground\ 2 T. olive oil | toast the walnuts in a pan with salt | oil, S&P until very brown. fresh-ground (if possible) pepper / 1 stick butter --add to above and melt 3 T. tomato paste in 1 c. warm water a few tomatoes, cut up (optional) ...add the tomato stuff to the pan and simmer to sauce consistency (@ 20 mins.). Have lots of grated Parmesan handy. ______________________________________________________________________________ Spaghetti Carbonara 1/4 c. heavy cream \ 1 egg | beat together in a large bowl 1/4 t. pepper (fresh really is better for this) / 1/4 lb. slab bacon, chopped and fried crisp with a couple cloves chopped garlic 1 c. grated cheese (mostly-Swiss, some Parmesan is best) Cook pasta for 3-4 and drain it, but make it snappy; the idea is to cook the egg in the residual heat of the pasta. Put the pasta in the bowl with the egg mixture and stir it up. Mix in the cheeses and bacon, including the bacon grease if you want. Voila! ______________________________________________________________________________ Simple Cook pasta for 2. Meanwhile, smash up a couple cloves garlic, sautee very lightly in 3 or 4 Tablespoons of olive oil. When the pasta is done, drain it and swish it around in the pan with this stuff a couple of times.
