Also, one can buy one that is self-cleaning - the back of the pressing arm has an array of pegs that just line up with and fit into the back of the arm with all the little holes. On garlic presses: the nicest one I've seen is made by a Swiss company called Suzi. The thing is mechanically cleverly designed, and is built to really last. It's one of those tools that you like to have, even if you don't use it that much, just because it's so nicely made. (Don't get me wrong - we use ours constantly, being severe garlic junkies.)
