       Happy Fat Tuesday.
       PACZKI
       Dissolve 2 packets (4.5 teaspoons) yeast in .5 cup lukewarm
       water. Pinch of sugar.
       Large bowl: 4.5 cups flour, make a well; add yeast; mix lightly;
       set aside.
       Put 1 cup sugar, 1.25 sticks butter; 1 cup milk; 1 tablespoon
       salt into a pot and warm to lukewarm
       Pour this over flour/yeast; add 2-3 beaten eggs. mix for 5
       minutes with a wooden spoon. If the mixture seems too wet, add
       some flour.
       Grease the sides of the bowl, cover with a dish cloth, and let
       rise 1-2 hours until double in bulk.
       Pat the whole mixture down to 2”; cut out paczki*; cover with a
       dish cloth and allow to rise until double again. (*Use whatever
       you like to make your pastries smaller or larger; I’m going to
       use an old gelato jar, a little bigger than a coffee cup. Last
       time I used something smaller, and I got something more like
       doughnut holes than paczki.)
       Heat vegetable oil to 350º. Fry until brown (2-3 minutes per
       side).
       To sugar: place table sugar in bag and toss 3-4 at a time while
       still warm. (If you prefer, you can use powdered sugar instead.
       Too messy for me.)
       They can be filled with jelly or jam if you have a piping bag
       and are ambitious enough. I’m fine with balls of dough, cooked
       in fat, rolled in sugar. That’s more than enough for me.

       This is an item I happily outsource to the professional polish
       bakers.
       Of course with jelly.
       Although they shouldn't do this super bowl week fat Sunday and
       fat Tuesday.

       when i first saw this thread title in my unread messages view, i
       assumed it was about former press secretary Jen Psaki and i
       wondered what was up with her.
       then i saw the thread fell under the Food category & i'm like:

       My husband had a tooth implant this morning and another
       extracted. So we’re having deviled eggs, a spoon of ham salad,
       and potato salad for supper. Pretty heavy on the Mayo but it’s
       only one meal.
