It is very tasty, and probably already my new favorite salad to make with cucumbers. It tastes like springtime in a bowl to me. I loved the recipe as is (my only modification was using garlic infused extra virgin olive oil instead of whole garlic). I also loved it with a bit of crushed red pepper sprinkled on top, because I put that shit on everything. [/quote] I bet that’s what I’ve gotten at the little neighborhood store. I just thought they were smaller regular ones. The two types are very similar in texture and flavor, thinner skinned with smaller and softer seeds than the standard cucumber. I will make this salad again! I want to use it to make a gluten free pasta salad with marinated baked tofu made to taste sort of cheesy. A bit of feta cheese would be an awesome addition to this salad, but too much might overwhelm the flavor of the fennel. Maybe a milder flavored chevre instead?
