      Title: Potato Chip Banana Bread Cookies
 Categories: Cookies, Fruits, Potatoes
      Yield: 4 Dozen
 
      1 c  Butter; softened
    3/4 c  Sugar
    3/4 c  (packed) brown sugar
      1 c  Mashed ripe bananas
      2 lg Eggs
      1 ts Vanilla extract
  2 1/2 c  A-P flour
      1 ts Baking soda
    1/2 ts Salt
      2 c  Crushed, baked potato chips
      1 c  Butterscotch chips
 
  Set oven @ 350ºF/175ºC.
  
  In a large bowl, cream butter and sugars until light and
  fluffy, 5-7 minutes. Beat in bananas, eggs and vanilla.
  In another bowl, whisk flour, baking soda and salt;
  gradually beat into creamed mixture. Fold in potato
  chips and butterscotch chips.
  
  Drop by heaping tablespoonfuls 2" apart onto greased
  baking sheets. Bake 10-12 minutes or until edges are
  golden brown. Cool on pans 5 minutes. Remove to wire
  racks to cool.
