      Title: Cranberry-Walnut Chicken Salad Sandwiches
 Categories: Fruits, Nuts, Poulter, Breads
      Yield: 8 servings
 
    1/2 c  Mayonnaise
      2 tb Honey Dijon mustard
    1/4 ts Pepper
      2 c  Diced rotisserie chicken
      1 c  Shredded Ementhal (Swiss)
           - cheese
    1/2 c  Chopped celery
    1/2 c  Dried cranberries
    1/4 c  Chopped walnuts
    1/2 ts Dried parsley flakes
      8    Lettuce leaves
     16 sl Pumpernickel bread
 
  In a large bowl, combine the mayonnaise, mustard and
  pepper. Stir in the chicken, cheese, celery,
  cranberries, walnuts and parsley.
  
  Place lettuce on 8 slices of bread; top each with 1/2
  cup chicken salad. Top with remaining bread.
