You were right, the /etc/timezone file had Etc/UTC in it. 
It seems that when I set the zoneinfo, I did it only in the /etc/localtime
file.

Now both are pointing correctly to America/Argentina/Buenos_Aires.

It was a silly mistake, but couldn't find the answer.
