Mac apps that are compiled only for PowerPC are the only ones that need to be run through emulation. OS X for Intel systems has a piece of software called Rosetta, which runs PowerPC Mac apps on Intel Macs. The "universal binaries" don't need that because universal binaries include both the Intel and PowerPC-compiled versions, so they run natively on both Intel and PowerPC Macs.
