Subj : 6/26 Choc Pudding Day - 4 To : All From : Dave Drum Date : Fri Jun 24 2022 10:34:08 June 26 - National Chocolate Pudding Day MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Genevieve's Chocolate & Marmalade Bread N' Butter Pudding Categories: Breads, Desserts, Chocolates, Dairy Yield: 10 servings 400 g Brioche loaf; torn in - bitesize pieces 200 g Jar of marmalade 70 g Dark chocolate; broken in - bits 3 tb Sugar; any sort 500 ml Milk 4 lg Eggs 1/2 Vanilla pod Set the oven @ 150ºC/300ºF/gas mark 2. Grease 3 small (or 1 medium) heat proof ramekins really well with butter Tear the bread into medium chunks and spread one layer across the bottom of each dish Sprinkle evenly with half the chocolate and little blobs of marmalade. Layer with more bread, followed with the rest of the chocolate and some more marmalade. Layer the rest of the bread over the top. In a small saucepan add the caster sugar, milk and the half vanilla pod. Split the vanilla pod down the middle with a sharp knife and scrape out the seeds. Add the seeds and the pod to the milk and sugar mixture Gently warm over a medium to high heat, whisking occasionally to dissolve the sugar. Once the milk is just boiling, remove from the heat and fish out the vanilla pod, and discard. Slowly pour the hot milk into the egg, whisking vigorously Divide the custard mixture between the three dishes, stopping just as you reach the top layer of bread; this will insure a crunchy topping. Sprinkle each portion with demerara sugar, and bake in the oven for 30 minutes, or until the custard is set and the pudding has puffed up.
