Subj : Weekend projects To : ALL From : JIM WELLER Date : Sun Jul 03 2022 19:58:00 Canada Day Moose and pork burgers: I made small grilled meatloaf patties. My mixture was 50/50 lean ground moose and fatty ground pork, lots of finely chopped onion, 2 cloves of minced garlic, fine dried and toasted bread crumbs, black pepper, a pinch of ground habaneros, ground bay leaves and rosemary, Italian seasoning mix, a tsp of mustard powder, a tablespoon of ketchup and one egg. Despite all the seasonings and other ingredients the distinct taste of moose came through nicely. Buns: homemade basic white and onion and mustard flavoured rye. Toppings and condiments: Romaine lettuce, beefsteak tomatoes, more onion, dill and Yum Yum pickles, green hotdog relish, red tomato chow chow, HP sauce and three kinds of mustard; Dijon, old fashioned coarse grained and standard French's, butter, Mozza and old Cheddar cheeses. Set up buffet style and everyone built their own burger. French green beans; I chopped them into one inch pieces, blanched them for just 2 minutes, added a pinch of baking soda to make them a brighter shade of green, drained, rinsed and chilled them. Later in a different sauce pan I sweated sliced onion crescents in olive oil until translucent, then added slivered garlic. After a couple of minutes I added the green beans along with black pepper and a generous amount of tarragon. Shook the pan to coat the beans in oil and cooked them 2 minutes more. Lastly I chopped up four canned plum tomatoes and stirred them in. Heated it some more until the tomatoes were heated through and served. Cassis martini: Since I had had success in the past adding a third flavour to both standard Manhattans and Martinis to create new drinks I made a large batch of black currant tinged martinis: 8 parts gin, 4 parts vermouth, 2 parts creme de cassis and 1 part lemon juice. Chilled and served on the rocks with an optional splash of soda. No olive! I would have garnished them with a raspberry or blackberry though if I had had them on hand. Very nice; will make again.
