Anita) and I lost interest in gardening, that we always did together. My point was of course, that the only way to get a real Italian, sun ripe tomato is to get them canned directly from Italy -- and they are far cheaper than any fresh tomato that you can find on any farmers market, and tastes better than even your best attempt to grow them yourself. ATM I'm growing Carolina Reapers, that's the present extent to my home growing. Maybe I'll eventually post my recipe for Tabasco sauce made from fermented Carolina Reapers, if I may interrupt the totally c/oz/lb domination in this echo. My ketchup: 500 g canned Italian tomatoes 50 g sugar 30 g apple cider vinegar (or any other that you like) 20 g paprika powder 10 g salt 20 g HP sauce (mostly for the tamarind) 20 g Dijon mustard Bring the first five ingredients to a boil and let them simmer for ten minutes or so while stirring occasionally. Remove from the stove and let cool a few minutes (HP sauce and mustard will lose a lot of flavour if to hot). Add the HP sauce and the mustard. Use a mixer to make a smooth sauce.
