Finally I figured out that it wasn't the lobster he especially liked it was the melted butter that sided it. I told him "Dip anything in enough butter and it's going to taste pretty good." I'd just as soon have shrimp or crawfish (aka crawdads/mud bugs). MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Crawfish Jambalaya Categories: Cajun, Seafood, Rice, Vegetables, Chilies Yield: 4 Servings 12 oz Peeled, cooked crawfish 2 Ribs celery; sliced 1 lg Onion; chopped 1 md Bell pepper; chopped 1 cl Garlic; minced 2 tb Butter 1 2/3 c Water 1/2 ts Salt 1/2 ts Dried thyme; crushed 1/4 ts Crushed red pepper 1/8 ts Ground black pepper 1 Bay leaf 1/2 c Long-grain rice 14 1/2 oz Can tomatoes; cut up 3 oz Tomato paste; 1/2 a 6 oz can Celery leaves (opt) Thaw crawfish, if frozen. Rinse crawfish under cold running water; set aside. In a 3-quart saucepan cook celery, onion, green pepper, and garlic in butter about 5 minutes or until tender. Add water, salt, thyme, red pepper, black pepper, and bay leaf. Bring mixture to boiling. Add rice. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Stir in undrained tomatoes & tomato paste. Add crawdads. Cook for 2 to 3 minutes more or until crawfish or shrimp are heated through. Remove bay leaf. Serve in soup bowls.
