      Title: Farm Stand Hash Browns
 Categories: Potatoes, Vegetables, Greens. mus
      Yield: 4 servings
 
    1/4 c  Olive oil
      2 lb Frozen, cubed, hash brown
           - potatoes
      1 lg Red bell pepper; chopped
      1 lg Onion; chopped
      2 c  Sliced fresh mushrooms
      1 ts Salt
    1/2 ts Black pepper
      2 c  Fresh spinach
 
  In a large skillet, heat oil over high heat.
  
  Add potatoes, and cook 10 to 12 minutes, or until
  lightly browned.
  
  Add bell pepper, onion, mushrooms, salt, and black
  pepper. Cook 6 to 8 minutes, or until veggies are
  tender, stirring occasionally. Add spinach and cook 1
  minute; serve immediately.
