I like a savory version, something like this: MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spicy Fried Mush with Ham Categories: Corn, Cheese, Ham, Sausage, Chilies Yield: 4 Servings 1 c Corn meal 1 c Water 1 ts Salt 3 c Boiling water 1/4 ts Paprika Cayenne to taste 1/4 c Grated cheese 1/2 c Bacon bits, diced ham or sliced cooked sausage Butter or bacon fat diced onions fried or fresh herbs Combine the corn meal and salt with one cup of water. Add the mixture slowly into a pot with 3 cups of boiling water, stirring constantly so the porridge won't go lumpy. Boil for 3 min; reduce heat, cover and steam 10 min. Add spices, cheese and ham etc. and pour into a baking dish. Bake at 350 for 1/2 hr or longer until firm and starting to brown around the edges. Cool. Next day, slice and fry strips in butter or bacon fat. As well as cheese and ham you can add chopped onions or herbs. JW MMMMM Cheers Jim ....
