I use either fine, dried bread crumbs or crumbled crackers to help soak up and retain the rendered fat from the cheaper grinds of beef (30 % fat). I also bake it on a raised drain rack insert in a bread pan. Soft bread crumbs wouldn't absorb much fat and milk would make the whole thing mushy and wet.
