MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Isabelle's Quick Sausage-And-Spinach Pasta Categories: Pasta, Sausage, Cheese Yield: 4 Servings 250 g Orecchiette pasta 1 tb Good-quality olive oil 1 Italian sausage (hot or Sweet) 1 c Simple Tomato Sauce 2 c Fresh baby spinach, washed And dried Parmesan cheese Cook pasta. Meanwhile, heat the oil in a large saute pan over medium-high heat. Cut sausage into 1/2" thick slices; add to hot oil and saute until brown on all sides, about 5 minutes. Stir in tomato sauce; bring to a boil, then reduce to low and simmer until sausage is cooked through, about 5 minutes. Add sauce to cooked, drained pasta. Stir in baby spinach and toss to combine (don't worry if this seems like a lot of spinach - the heat from the pasta will wilt it down to a manageable amount).
