Subj : Weekend projects To : ALL From : JIM WELLER Date : Sun Sep 18 2022 20:34:00 I like to shop, cook and bake on the weekend so that work day meals are fast and easy. This weekend's projects; Rye bread: this time I went with two cups unbleached all purpose flour and one each of whole wheat and rye, flavoured with 1 tb of flax seed and 2 tsp of mustard powder. Very nice with liverwurst, diced onion and prepared mustard. Also good smeared with room temperature Brie. Cornmeal bread: 3 cups AP flour and 1 cup yellow cornmeal, sweetened with 2 tb corn syrup. Again I added a little flax seed. It made great French toast. Roast pork: A very lean, overly trimmed, centre cut loin that was on special. I rubbed it with oil, then a spice blend, draped it with bacon and surrounded it with small new potatoes. I roasted it at 325 F for 75 minutes until the meat hit 150 F. (I should have stopped at 145 F.) My spice rub: mustard powder, garlic powder, black pepper, poultry seasoning and ground summer savory. The potatoes got oiled and dusted with ground rosemary.
