Add peanut butter egg and vanilla, beat until smooth. Combine flour, baking soda and baking powder, add to creamed mixture and mix weill. For easier shaping, chill dough for at least one hour. Shape into 1 in balls, place 2 inches apart on ungreased baking sheets. Flatten each ball by crisscrossing with the tines of a fork dipped in white sugar. Bake in preheated 375 degree oven for 10-12 minutes OR until bottoms are lightly browned and cookies are set. Baked 12 minutes, let rest on cookie sheet for 5 min and then moved to cooling rack.
