      Title: Jiffy Chicken Surprise
 Categories: Poultry, Cheese, Breads, Herbs
      Yield: 4 servings
 
    3/4 c  Ricotta cheese
      4 oz Can mushroom stems & pieces;
           - drained
      2 tb Grated Parmesan cheese
      1 tb Olive oil
    1/2 ts Garlic powder
    1/4 ts Salt; divided
    1/4 ts Black pepper; divided
      4    Boned, skinned chicken
           - breast halves; pounded
           - 1/2" thick
      2 tb Italian-flavored bread
           - crumbs
           Nonstick cooking spray
 
  Set the oven @ 350ºF/175ºC.
  
  Coat a rimmed baking sheet with cooking spray.
  
  In a small bowl, combine the ricotta cheese, mushrooms,
  Parmesan cheese, oil, garlic powder, 1/8 teaspoon salt,
  and 1/8 teaspoon pepper.
  
  Spread the mixture evenly over chicken breasts and roll
  up jelly-roll style. Place on prepared baking sheet.
  Sprinkle with the remaining 1/8 teaspoon of each salt
  and pepper. Top with bread crumbs and lightly spray each
  roll-up with cooking spray. (This gives it an oven-fried
  quality you'll love!)
  
  Roast for 25 to 30 minutes or until juices run clear and
  crust is golden.
