MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: King Ranch Casserole
 Categories: Poultry, Vegetables, Chilies, Cheese, Breads
      Yield: 6 servings
 
      1 tb Vegetable oil
      1 lg Bell pepper; diced
      1 c  Chopped onion
      2 cl Garlic; minced
 10 3/4 oz Can cream of chicken soup
 14 1/2 oz Can diced tomatoes w/green
           - chilies
      2 tb Chilli spice mix
     12    Corn tortillas; in 1/2"
           - strips
      4 c  Diced cooked chicken
      2 c  Shredded sharp Cheddar
           - cheese
 
  Set oven @ 350ºF/175ºC.
  
  Coat a 9" x 13" baking dish with cooking spray.
  
  In a large skillet over medium heat, heat oil. Saute
  bell pepper, onion, and garlic 4 to 5 minutes, or until
  tender. Stir in soup, diced tomatoes, and chili powder.
  Cook just until warmed.
  
  Line bottom of prepared baking dish with half the
  tortilla strips. Sprinkle half the chicken over tortilla
  strips, top with half the sauce, and half the cheese.
  Repeat layers.
  
  Bake 30 to 35 minutes, or until bubbly and hot.
