MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cauliflower-Broccoli-Cheese Soup Categories: Soups, Vegetables, Cheese, Dairy Yield: 2 Servings 3/4 c Small cauliflower florets 3/4 c Small broccoli florets 1/4 c Chopped onion 1/4 c Halved, thin sliced carrot 2 tb Butter 1 1/2 c Milk or half & half; divided 1/2 ts Chicken bouillon granules +=OR=+ 1/2 ts Chicken soup base Salt & pepper 2 tb All-purpose flour 1/3 c Cubed Velveeta or mild - cheddar cheese In a large saucepan, cook the cauliflower, broccoli, onion and carrot in butter for 5 minutes or until vegetables are crisp-tender. Stir in 1 1/4 cups milk, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for about 5 minutes or until vegetables are tender, stirring occasionally. Combine the flour and remaining milk until smooth; add to saucepan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; add cheese and stir until melted.
