MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Zucchini Pie
 Categories: Main dish
      Yield: 6 Servings

      4 c  Thinly sliced zucchini
    1/4 c  Chopped onion
    1/2 c  Butter
    1/4 c  Parsley; fresh chopped -OR-
      2 tb Parsley; dry flakes
    1/4 ts Salt
    1/2 ts Pepper
    1/2 ts Garlic powder
    1/4 ts Basil
    1/8 ts Oregano
      2    Beaten eggs
      8 oz Mozzarella; grated
      1    Regular pie crust; unbaked

  Preheat oven to 375 F.

  Make pie crust thick and spread in pie plate; bake for 15 minutes.

  Meanwhile, cook and stir zucchini and onion in melted butter in a
  dutch oven or large frying pan for approximately 10 minutes. Stir in
  seasonings and set aside.

  Combine 2 beaten eggs and grated cheese, stir into vegetable and
  spice mix.

  Pour filling into pie crust and bake for 20 minutes or until center
  is set.
