The restaurant here has a dish they call chicken mediterranean. It has feta cheese, typical black olives and other stuff cooked which is on top of the chicken. My wife does not like the flavor of the cooked black olives. But, she prepares a similar dish that has kalamata olives cooked with the chicken and likes it. This does not cook the olives, but it is good. The comments about dehydrating are because this is one of the recipes that we sent to our son when he was in the Army and stationed in the mid-east. The Army is not really very vegetarian friendly. MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Moroccan Chickpea Salad with cumin & garlic Categories: Testing, Easy, Dehydrating, Vegetarian Yield: 4 Cups 16 oz CANNED CHICKPEAS 1 c Chopped fresh tomatoes (med dice) 1/2 c Diced red onion (med dice) 1 c Bell pepper - med dice 1/2 c Mezzetta bottled pitted Kalamata olives. (slice each olive in half) (after filling 1/2 cup) 1/2 c Olive oil 1/4 c Red wine vinegar 1 ts Dried parsley 3 ea Garlic cloves, crushed 1 tb Cumin 1/2 ts Cayenne pepper Drain chickpeas and rinse. Mix all ingredients together. Place in fridge over night if possible. Serve chilled. Cold and spicy is a good combination for summer picnics. Variation of recipe from vegweb.com.
