I'd been canning and or freezing produce for about 6 months already and was ready to stop for the season when Steve brought home the potaotes. Not wanting to throw out food, I looked thru a couple of my old stand by "puttin' up" books for ideas, saw apple butter and had a "Eureka!" moment. (G) Never have seen it commercially or recipies for it.
