Subj : Cream of Spinach Soup To : All From : Ben Collver Date : Sun Feb 26 2023 10:06:53 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream Of Spinach Soup Categories: Soups, Vegetarian Yield: 4 Servings MMMMM----------------------------BASE--------------------------------- 1 Carrot; chopped 1 Onion; chopped 1 Clove garlic; minced 1 Potato; cubed MMMMM--------------------------SPINACH------------------------------- 1 lb Spinach 1 c Water MMMMM----------------------------ROUX--------------------------------- 1/3 c Flour 1/3 c Butter; melted 2 c Milk MMMMM-------------------------SEASONING------------------------------ 1/2 ts Salt; or more Pepper 1/2 ts Basil 1 pn Nutmeg 1 pn Thyme -OR- Any fresh herb like parsley -or marjoram Takes 40 minutes to prepare. Cover base ingredients with water. Steam until tender. Puree in its own water. Steap spinach until wilted. Puree. Make a roux by whisking flour into melted butter. Whisk in milk and cook over very low heat, stirring until thickened. Ass the spinach to the roux, along with seasoning ingredients. Add the vegetable puree to the soup.
