      Title: Mini Vegan Cherry Cashew Cakes

      Yield: 24 Servings

MMMMM-------------------------CHEESECAKE------------------------------
      2 c  Raw cashews soaked overnight
      1 ts Lemon juice
      4 tb Corn starch
      3 tb Agave nectar
    1/2 c  Sour cream
      3 tb Coffee creamer

MMMMM---------------------------CRUST--------------------------------
     15    Ginger cookies
      2 tb Butter

MMMMM--------------------------TOPPINGS-------------------------------
      1 cn Cherry pie filling
      1    70% cocoa chocolate bar;
           -shaved

  In food processor blend cookies and butter to make crumb crust.

  Line 2 muffin pans with cupcake liners and spoon in cookie crumb
  crust.

  In a food processor add soaked drained cashews with remaining filling
  ingredients. Puree until smooth.

  Spoon on top of crumb crust.

  Bake at 325 degrees F for 15-20min.

  Top with cherries and let chill for at least 30 minutes before adding
  chocolate shavings.
