Subj : Swiss Cheese & Onion Soup To : All From : Ben Collver Date : Sat Mar 04 2023 10:32:39 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Swiss Cheese & Onion Soup Categories: Soups, Vegetarian Yield: 8 Servings 3 c Onion; thinly sliced 2 c Water or stock 1 1/2 c Milk; warmed 1 1/2 c Swiss cheese; grated 1 Clove garlic; minced 5 tb Butter 3 tb Flour 3/4 ts Dry mustard 1 tb Dry sherry; or more to taste 1/2 ts Prepared horseradish 1 1/2 ts Salt; or more to taste Black pepper 1/2 ts Tamari A few drops of dabasco sauce 1 ds Worcestershire sauce; -(optional) Heat 2 tb butter in a sauce pan. Add garlic, onion, mustard, and salt. Saute until tender. Add water or stock. Cover and simmer over low heat. In a separate saucepan, melt remaining 3 tb butter. Whisk in 3 tb flour and cook, whisking over low heat, one minute. Slip a waffle (heat absorber) under the pan. Add milk. Cook, whisking, until uniform and thick, 5-8 minutes. Add horseradish, sherry, and cheese. Add cheese sauce to onions and mix thoroughly. Add pepper, tamari, tabasco, and worcestershire sauce. Cook over low heat 8-10 minutes, stirring occasionally.
