Subj : Chilled Buttermilk Soup To : All From : Ben Collver Date : Wed Apr 05 2023 11:52:30 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chilled Buttermilk Soup Categories: Soups Yield: 4 Servings 5 Thin slices -Westphalian-style -pumpernickel bread 1/2 c Seedless raisins 1 tb Honey; (or more to taste) 2 ts Fresh-grated lemon rind 1/4 ts Ground cinnamon 1 1/2 qt Buttermilk Freshly grated nutmeg Toast the bread until dry. Cool. Place the raisins in a small bowl and pour 1 cup boiling water over them. Let them soak for five minutes, then drain off the excess water. Pulverize the toasted bread in an electric blender and rub the crumbs through a dry sieve. Combine all ingredients and mix well. Regrigerate until very cold.
