      Title: Tarragon Tuna Salad
 Categories: Seafood, Vegetables, Citrus, Herbs
      Yield: 4 servings
 
     12 oz Light water-packed tuna;
           - drained, flaked
      1 c  Chopped celery
    1/4 c  Chopped sweet onion
    1/3 c  Mayonnaise
      2 tb Minced fresh parsley
      1 tb Lemon juice
      1 ts Minced fresh tarragon
           +=OR=+
    1/4 ts Dried tarragon
    1/2 ts Dijon mustard
    1/4 ts White pepper
           Lettuce leaves; opt
 
  In a small bowl, combine the tuna, celery and onion.
  Combine the mayonnaise, parsley, lemon juice, tarragon,
  mustard and pepper. Stir into tuna mixture. If desired,
  serve on lettuce leaves.
