Subj : Pizza or Pita Bread To : All From : Ben Collver Date : Sat Jul 15 2023 10:43:02 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pizza Or Pita Bread Categories: Breads Yield: 12 Pitas 1 tb Yeast 1/2 ts Salt 3/4 c Water; warm 2 3/4 c Unbleached flour 1 c Water; warm 3/4 c Cake flour 1 ts Sugar In a medium bowl, sprinkle yeast over 3/4 cup warm water and let soften. Stir in additional water, sugar, salt and flours with a wooden spoon, mixing until well blended. Turn the dough out onto a floured board and dust lightly with flour. Knead about 10 minutes, adding flour as necessary to make dough smooth and elastic. Place in a greased bowl; turn dough to grease top. Cover let rise in a warm place until doubled, about an hour. Punch dough down and let rise again for about 1/2 hour. Turn onto a floured surface and knead again lightly. Divide dough into 3 equal portions for pizza, or 12 portions for pita bread. Shape each into a ball and roll until very flat, 12" for pizzas or 6" for pitas. Place on floured baking sheets. For pitas, heat oven to 450 F and bake for 5 to 10 minutes. For pizzas, top with sauce, mozzarella cheese, and any other desired toppings, and bake at 425 F until browned, 20 to 25 minutes. Makes 3 pizzas or 12 pitas. Recipe by Julia Child MMMMM .
