Subj : Vegan Nanaimo Bars To : All From : Ben Collver Date : Sun Jul 16 2023 10:58:18 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Vegan Nanaimo Bar Categories: Cookies, Bars Yield: 9 Bars MMMMM------------------------BOTTOM LAYER----------------------------- 1/2 c Earth balance; (or other -vegan margarine) 1/4 c Sugar 1/3 c Unsweetened cocoa 1 tb Flax meal or egg-replacer -with 3 tb water 1 ts Vanilla 2 c Graham crackers; crushed or -crumbs 1 c Unsweetened shredded coconut 1/2 c Walnuts or pecans; chopped MMMMM------------------------MIDDLE LAYER----------------------------- 1/4 c Earth balance 2 c Confectioners' sugar 2 tb Vanilla custard powder; (or -regular custard/pudding -powder with vanilla added) 3 tb Plain soy/coconut milk MMMMM-------------------------TOP LAYER------------------------------ 4 oz Semi-sweet chocolate; (5 -liquid ounces) 1 tb Earth balance; (or other -vegan margarine) Grease a 9-inch square cake pan. In a small bowl, beat flax meal and water together until frothy, set aside. In a sauce pan over low heat, combine 1/2 cup earth balance, 1/4 c sugar, 1/3 c cocoa, and 1 ts vanilla. Add flax/egg replacer mixture and stir constantly until mixture thickens. Add 2 c graham crackers crumbs, 1 c coconut, and 1/2 c chopped nuts, stirring to combine. Press the mixture into the greased pan. In a large bowl, beat together 1/4 cup earth balance, 2 c confectioners' sugar, 2 tb vanilla custard powder, and 3 tb soy/coconut milk until creamy. Spread mixture over graham cracker base in pan. Refrigerate until firm, at least 1 hour. Melt 5 oz semi-sweet chocolate and 1 tb earth balance. Pour over chilled bars and spread.
