Subj : Broccoli Mushroom Noodle Casserole To : All From : Ben Collver Date : Mon Jul 24 2023 11:08:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Broccoli Mushroom Noodle Casserole Categories: Casseroles Yield: 6 Servings MMMMM-------------------------VEGETABLES------------------------------ 2 Fresh broccoli stalks * 1 lb Fresh mushrooms 1 lg Onion MMMMM-------------------------CASSEROLE------------------------------ Salt & pepper Butter 1/4 c Dry white wine 3 Eggs 3 c Ricotta or cottage cheese; -(or a combination) 1 c Sour cream 3 c Raw; wide, flat egg noodles 2 tb Wheat germ -OR- 1/2 c Fine bread crumbs 1 c Sharp cheddar cheese; grated * Use broccoli stems as well as flowers--shave their tough outer skin and slice thinly. Chop vegetables and saute in butter until tender. Salt and pepper lightly. Remove from heat and toss with dry white wine. Beat eggs in a large bowl. Whisk in cheese and sour cream. Boil egg noodles in salted water until slightly underdone. Drain and butter. Remove sauteed vegetables from pan to cheese mixture with slotted spoon. Add noodles and wheat germ or bread crumbs. Spread into buttered 9x13" baking pan. Top with more wheat germ or breadcrumbs and grated cheddar cheese. Heat oven to 350 F. Bake covered for 30 minutes, then unconvered for 15 minutes more.
