Subj : Moroccan Lentil Soup To : All From : Ben Collver Date : Sat Oct 21 2023 11:56:25 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Moroccan Lentil Soup Categories: Crockpot, Moroccan, Soups Yield: 1 Batch 1 c Onions; chopped 1 c Carrots; chopped 3 cl Garlic; minced 1 ts Extra virgin olive oil 1 ts Ground cumin 1/2 ts Ground coriander 1 ts Ground turmeric 1/4 ts Ground cinnamon 1/4 ts Freshly ground black pepper 4 c Vegetable stock 1 1/2 c Cauliflower; chopped 1 c Dry lentils 28 oz Can diced tomatoes; (790 g); -with the juice 1 tb Tomato paste 1 c Fresh spinach; chopped; -gently packed 1/4 c Fresh cilantro; chopped 1 tb Red wine vinegar; plus more -for serving; (optional) Combine the onions, carrots, garlic, olive oil, cumin, coriander, turmeric, cinnamon, and 1/4 ts black pepper in the slow cooker. Add the vegetable stock, cauliflower, lentils, tomatoes, and tomato paste and stir to combine. Cover and cook on high for 4-5 hours or on low for 8-10 hours, until lentils are tender. During the last 30 minutes of cooking, stir in the spinach. Just before serving, stir in the cilantro and vinegar. Serve hot with more vinegar, if desired.
