Subj : National Pork Month - 3 To : All From : Dave Drum Date : Sun Oct 29 2023 14:13:31 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spicy Orange Pork - V2 Categories: Pork, Citrus, Vegetables, Chilies Yield: 5 Servings 2 lb (to 3 lb) boneless pork; in - 1/2" cubes 2 pk Old El Paso or Ortega Taco - Seasoning Mix Oil 1 lg Bell pepper; cored, diced - small 1 lg (but not huge) yellow onion; - diced small 14 1/2 oz Can diced tomatoes w/green - chilies 16 oz Jar salsa; pick yer heat 16 oz Jar orange marmalade 2 tb Arrowroot +=MIXED WITH=+ 2 tb Water Coat the pork cubes with the taco seasoning and brown in a little oil in a 12" non-stick skillet. Add the onion and bell pepper, saute until onion is translucent. And the tomatoes w/chilies and their juice. Cover and let it cook until you can't stand it. Nuke the marmalade for a minute or so to loosen it and halp it pour. Add the salsa and marmalade and stir until well mixed. Lower heat to a seven-bubble simmer and cover. Simmer gently for 15 minutes. Total time about 25 minutes, prep and all. Serve over rice, pasta or home made egg noodles. 6 normal servings. 3 Uncle Dirty Dave servings. NOTES: This is a quick and tasty little pork dish I like a lot. It makes up well with most any kind of preserves I have tried with it except my grandmother's watermelon rind preserves. Modified: 17 May 2015 to add tomatoes w/chilies, onion and bell pepper and increase yield to six servings. Well received as served w/penne rigati.
