MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Cornmeal Catfish w/Avocado Sauce
 Categories: Seafood. fr, Citrus, Herbs, Vegetables
      Yield: 4 servings
 
      1 md Ripe avocado; peeled, diced
    1/3 c  Mayonnaise
    1/4 c  Fresh cilantro leaves
      2 tb Lime juice
    1/2 ts Garlic salt
    1/4 c  Cornmeal
      1 ts Seafood seasoning
      4    (6 oz ea) catfish fillets
      3 tb Oil
      1 md Tomato; chopped
 
  Place the first 5 ingredients in a food processor;
  process until blended.
  
  In a shallow bowl, mix cornmeal and seafood seasoning.
  Dip catfish in cornmeal mixture to coat both sides;
  shake off excess.
  
  In a large skillet, heat oil over medium heat. Add
  catfish in batches; cook 4-5 minutes on each side or
  until fish flakes easily with a fork. Top with avocado
  sauce and chopped tomato.
