      Title: Carrot Cashew Stew

      Yield: 6 Servings

    1/4 c  Butter or oil
  1 1/2 c  Onions; chopped
      4 c  Carrots; grated
      3 oz Can tomato paste
      1 c  Peppers; chopped
      6 c  Water
      1 c  Apples; chopped
      2 ts Salt
    1/2 c  Dry rice
      1 c  Raisins
      1 c  Cashews
  2 1/2 c  Yogurt (optional)

  A favorite for rabbits and redheads.

  Saute onions in oil, then stir in carrots, peppers, and tomato
  paste. Add water, apples, and salt. Bring to a boil and add rice.
  Cover and simmer for 45 minutes. Add raisins and cashews and simmer 5
  minutes.
