Subj : Pitcher Mountain Blueberry Bread To : All From : Ben Collver Date : Mon Mar 25 2024 10:44:12 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pitcher Mountain Blueberry Bread Categories: Breads, Camping Yield: 1 Loaf 1/4 c Yellow corn meal 1 c Water; boiling 1 tb Oil 1/4 c Molasses 1 tb Active yeast 1 Egg; beaten 1/4 c Water; lukewarm 3 c Whole wheat or white flour 2 c Blueberries After spending an entire day eating and picking blueberries on top of Pitcher Mountain in Stoddard, New Hampshire, I experimented with ways to use the 4 quarts of berries that I had picked. For days everything I prepared--salads, cereal, omelets, and even soups--was speckled with blue, which resulted in a temporary glowing, purple smile for all who indulged in my concoctions. One of my favorites was the following bread in which the blueberries explode while the bread is baking and blend wonderfull with the yellow corn meal. Stir corn meal into boiling water until mixture thickens. Remove from heat and add oil, molasses, and egg. Dissolve yeast, add to corn meal. Add remaining flour and knead 10 minutes. Cover and let dough rise until doubled in bulk. Punch dough down flat and sprinkle blueberries on top. Roll up dough with blueberries inside. Cover and let rise again (45 minutes).
