      Title: Mexican Meat Loaf
 Categories: Beef, Breads, Cheese, Vegetables, Fruits
      Yield: 2 servings
 
      1 lg Egg, lightly beaten
    3/4 c  Canned diced tomatoes,
           - drained
    1/2 c  Crushed tortilla chips
    1/4 c  Shredded Cheddar cheese
    1/4 c  Salsa
      2 tb Taco seasoning
      2 tb Diced onion
      2 tb Diced ripe avocado
    1/8 ts Pepper
    1/2 lb Lean ground beef
 
  Set oven @ 350ºF/175ºC.
  
  In a bowl, combine the first 9 ingredients. Crumble beef
 over mixture and mix well.
   
  Shape into two loaves; place in an ungreased 8" square
  baking dish. Bake 30-40 minutes.
