When cool enough to handle them, slip the skins right off. Slice them into 1/4 to 1/2" slices. If you prefer them chunked or diced cut them however you enjoy them most. In a kettle or stock pot combine (feel free to adjust ingredients to your taste): Add beets and let them simmer 5 to 10 minutes. Fill sterile jars and process.
