Subj : Frijoles Borraohitos (Beans With Beer) To : All From : Ben Collver Date : Mon Aug 26 2024 11:14:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Frijoles Borraohitos (Beans With Beer) Categories: Mexican Yield: 4 Servings 1 1/4 c Dry red, pink, or pinto -beans 4 c Water 12 oz Can beer 1/2 c Onion; chopped 6 sl Bacon 8 oz Can tomatoes; cut up 1 tb Cilantro or parsley; chopped 1 ts Salt 1/2 ts Crushed red pepper In large saucepan soak beans overnight in 4 cups water. (Or bring beans and water to boiling; simmer 2 minutes. Cover and let stand 1 hour.) Do not drain. Add beer and onion. Bring to boiling; cover and simmer mixture for about 1-1/2 hours or till beans are tender. Cook bacon until crisp; drain and crumble. Add bacon to bean mixture along with undrained tomatoes, cilantro or parsley, salt, and crushed red pepper; cover and simmer 30 minutes more.
