Subj : Spring Soups - 36 To : All From : Dave Drum Date : Thu Mar 27 2025 14:37:09 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Creamy Fresh Asparagus Soup Categories: Vegetables, Citrus, Dairy, Poultry Yield: 6 servings 2 tb Butter 2 lb Fresh asparagus; trimmed, - peeled, coarse chopped 1 lg Sweet onion; coarse chopped - (2 c) 32 oz Chicken broth 1 tb Lemon juice 1 ts Minced fresh tarragon 3/4 ts Salt 1/8 ts Fresh ground pepper 1/4 c Plain Greek yogurt 1/2 ts Grated lemon zest In a Dutch oven, heat butter over medium-high heat. Add asparagus and onion; cook and stir 10-12 minutes or until asparagus is crisp-tender. Add broth; bring to a boil. Reduce heat; simmer, covered, 6-8 minutes or until asparagus is tender. Remove soup from heat; cool slightly. Stir in lemon juice, tarragon, salt and pepper. Process in batches in a blender until smooth. Serve with yogurt and lemon zest.
