Subj : Microwave Zucchini Casserole To : All From : Ben Collver Date : Sat Apr 19 2025 10:09:59 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Microwave Zucchini Casserole Categories: Casseroles, Microwave Yield: 6 Servings 2 lb Zucchini (7 c); - sliced 3/8" thick 1/4 c Onion; chopped 1 c Sour cream 1 c Carrots; shredded 4 oz Herb seasoned stuffing mix - (2 c) 10 1/2 oz Can condensed cream of - chicken soup 1/4 c Butter Combine zucchini & onion in 12 x 7-1/2 x 2" glass baking dish; add 1/4 cup water. Cover; cook about 15 minutes or until zucchini is tender; stir every 3 minutes. Drain. Combine soup & sour cream; stir in carrots. Fold in zucchini & onion. In glass bowl, melt butter in microwave oven, about 30 seconds. Stir in stuffing mix. Spread zucchini mixture atop. Sprinkle with remaining stuffing. Microwave, uncovered, about 7 minutes or until hot; give dish hafl turn after 4 minutes. Note: Timing may be different for your microwave oven.
