I BC> like the idea of coming up with alternatives. Here's a recipe for I've never tried it with tofu. We've played around with tofu over the years (not recently) but never did a lot with it. The turkey or chicken version of wienerschnitzel is a lot more animal friendly than veal but the tofu would work (well pressed) for non meat eaters. I've stopped eating waffles and pancakes--grew up drenching them in maple syrup and it would be too hard a habit to break.
