      Title: Sweet Potato Hash w/Ham
 Categories: Vegetables, Pork, Cheese, Chilies
      Yield: 4 servings
 
      2 c  Diced, peeled, sweet
           -potatoes
      2 tb Butter
      1 tb Olive oil
      1 md Onion; chopped
      1 sm Red bell pepper; chopped
      3    Green onions; chopped
      1    Red chile; seeded, fine
           - chopped
      3 cl Garlic; minced
      2 c  Diced, fully cooked ham
    1/2 ts Pepper
    1/4 ts Salt
      4 lg Eggs
    1/4 c  Shredded white Cheddar
           - cheese
 
  In a large skillet, saute sweet potatoes in butter and
  oil until crisp-tender. Add the onion, red pepper, green
  onions and chile pepper. Saute 4-5 minutes longer or
  until tender. Add garlic; cook 1 minute longer. Stir in
  the ham, pepper and salt.
  
  With the back of a spoon, make 4 wells in the potato
  mixture; add an egg to each well. Sprinkle with cheese.
  Cover and cook for 4-5 minutes or until egg whites are
  completely set.
