      Title: Zucchini Patties
 Categories: Squash, Cheese, Herbs, Breads
      Yield: 4 servings
 
      2 c  Shredded zucchini
    1/2 c  Biscuit/baking mix
    1/2 c  Shredded cheddar cheese
      2 tb Grated onion
    1/2 ts Salt
    1/2 ts Dried basil
    1/4 ts Pepper
      2 lg Eggs; room temp, lightly
           - beaten
      2 tb Butter
 
  In a bowl, combine the first 7 ingredients. Stir in
  eggs; mix well. In a skillet over medium-high heat, melt
  butter. Working in batches, drop batter by 1/4 cupfuls
  into pan. Cook until lightly browned, 4-5 minutes on
  each side.
