Subj : Zucchini & Cauliflower A La Grecque To : All From : Ben Collver Date : Fri Aug 22 2025 10:27:34 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Zucchini & Cauliflower A La Grecque Categories: Greek, Zucchini Yield: 1 Batch 5 sm Zucchini; up to 6, sliced 1 Cauliflower; - broken into florets 1 Green pepper; julienned 1/2 c Olive oil 1 c Lemon juice 2 sl Lemon 1 ts Salt 1 cl Garlic; crushed 1/2 ts Pepper; coarsley ground 1 ts Thyme 1/4 ts Hot sauce Combine all ingredients except vegetables in a saucepan. Bring to boil, add vegetables. Reduce heat and summer until tender but not mushy. Place in large bowl or crock, cover, and refrigerate. Serve cold. Note: Other ingredients may be combined with the zucchini: green beans, Brussels sprouts, carrots, eggplant, onions, mushrooms, artichoke hearts, cherry tomatoes, small whole beets, red kidney beans, garbanzos, etc. Recipe by Zucchini Cookbook by Nancy C.
