Subj : Madras Chicken Curry To : All From : Ben Collver Date : Sun Oct 26 2025 06:24:26 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Madras Chicken Curiy Categories: Chicken, Indian Yield: 8 Servings 8 Chicken pieces 3 tb Vegetable oil 2 md Onions; chopped 4 ts Garlic; chopped 1 tb Fresh ginger; chopped 1 ts Turmeric spice 3 ts Chiles; chopped 3 ts Ground coriander 1 ts Ground cumin 2 md Tomatoes; chopped 2 sm Cinnamon sticks 2 c Coconut milk Heat the oil and fry onions, garlic, and ginger until soft. Add turmeric, chili, coriander, and cumin and fry for 2 minutes. Add tomatoes, stir well, cover, and cook until tomato is pulpy. Add chicken pieces and cinnamon sticks and stir well until chicken is coated with mixture. Cover and cook until chicken is almost cooked. Stir in coconut milk and simmer, uncovered, for about 15 minutes longer. Serve with rice.
