Southern style cornbread. Inspired by Joy of Cooking Southern Style Cornbread. Prepare in an oven using cast iron skillet or muffin pan, or over coals with cast iron skillet or dutch oven. 1 3/4c stone ground cornmeal 1t salt 1t baking soda 1t baking powder 2 eggs 2c sour cream 4T melted butter Oven method: 1. Preheat oven to 450 F. 2. Grease skillet or pan with bacon grease and heat in oven until fat is smoking. While pan heats... 3. Whisk together cornmeal, salt, baking soda, baking powder. 4. Beat eggs until light, mix in sour cream. 5. Melt butter. 6. Pour egg and sour cream mixture into dry ingredients. 7. Pour in butter and mix until a batter forms. 8. Pour batter into skillet or spoon into pan. 9. Bake 20 minutes at 450F in skillet or 8-10 minutes at 450F in pan, or until a toothpick inserted into center comes out clean. Coal method: 1. Preheat greased skillet or oven over a bed of coals about 2 inches above heat until fat smokes. 2. Prepare batter as in oven method. 3. Pour batter into skillet or oven. Cover skillet in foil tent. 4. Bake 30 minutes, rotating 1/4 turn every 2 minutes until toothpick inserted in center comes out clean. September 2019 Tom Canich .
