Preheat your waffle iron 16 17 2. In a large bowl whisk together the flour, baking powder, sugar, 18 and salt. 19 20 3. In a medium bowl, whisk together the milk, oil, egg yolks, and 21 vanilla together. 22 23 4. In a separate mixing bowl, beat the egg whites on high speed 24 until stiff peaks form. 25 26 5. Stir the milk mixture into the flour mixture until almost combined, 27 then fold in the egg whites until no streaks remain. 28 29 6. Scoop about 1/3 cup of batter for each waffle into the hot iron. 30 31 Use a clean mixing bowl. Make sure your equipment is squeaky clean 32 before whipping the egg whites to lofty clouds. Any lingering oils 33 from previous baking adventures will prevent them from setting into 34 stiff peaks. If unsure, run a cotton ball dipped in lemon juice on 35 your beaters and bowl to clean them. 36
