============================================================================= Title: Chicken marinade Date: 25-02-2021 ============================================================================= It's 9.16 a.m. In 10 days I'll have to take the Computational Chemistry exam and I seriously start studying. But before diving in SCF and DFT related stuff, I'd like to share my outstanding chicken marinade recipe. Is it a childish excuse not to face the university problems? Maybe. But I guarantee you it's a bomb. First off: remove from the chicken the connective tissue and the tendons. Engrave the chicken along horizontal lines and put some salt crystals into these slits. Then take a food-grade plastic bag: put the bird inside and add: - olive oil, - sweet paprika, - thyme, - soy sauce. Close carefull the bag and massage it lovingly for 5 minute. Put it in the fridge and wait for a couple of hours. The best way to cook the chicken is by using an air fryer - you can buy it at a very low price on Amazon for about 30$. 30 min at 180/200 °C. Final tip: a teaspoon of honey on the crispy surface(*) of the chicken will take you to heaven. 9.38 a.m. Time to open Jensen's book. (*)That lovely crispness is due to the Maillard reaction - if you're interested read something on Wikipedia.
